2020 Niu Jin Raw Pu-erh Tea
"Jin (橡筋)" tea refers to the tea grown in ancient tea gardens with fertile soil and sufficient sunlight. It is made from long buds and leaves at the top of ancient tea trees. The dry tea leaves are long, the first sip of the liquor is sweet, and the tea can be steeped multiple times.
As a representative of "Jin (橡筋)" tea. The cover paper for this tea uses "cow" to represent a unique characteristic of this tea. The tea leaves are picked from the tea trees in the ancient tea garden, creating an extraordinary taste for this tea.
The raw materials of this "Jin" tea are rare and carefully selected. The process that produces this tea is time-consuming. Each tea leaf is straightened by hand and arranged separately during sun-drying. Each cake creates a unique experience for the tea enthusiast.
Gongfu style (recommended)
About 5–7 g of leaf in a 100–120 ml gaiwan or small teapot, with water just off the boil (100 °C / 212 °F). Rinse once for 5–10 seconds and pour it away. Start with infusions of about 5–10 seconds and add a few seconds each round. Good leaf gives 8–15 infusions.
Mug or teapot
About 3–4 g per 250 ml, with water just off the boil. Rinse once, then steep 1–2 minutes for the first cup and a little longer for each cup after. The leaves give 3–4 cups.
Too bitter? Shorten the steep or use a little less leaf. Keep the water just off the boil.
Storage
Keep cakes in their paper wrappers, in a cardboard box, bamboo or unglazed clay, off the floor. Aim for 20–25 °C (68–77 °F) and 60–70% relative humidity, out of direct light, away from strong smells and with some airflow. For long-term aging, don't use the fridge, silica gel or airtight bags; a sealed tin is fine for the portion you are drinking now. Fuzzy or colored spots or a musty smell mean mold: don't drink it.
