Raw pu-erh (sheng) is made from sun-dried maocha that is steamed and pressed without pile fermentation, then left to change slowly in storage. Young raw pu-erh has a pale yellow liquor, a high aroma and a bitterness that turns into huigan. With years of storage the bitterness softens, the liquor deepens toward orange-red and an aged aroma develops.
