Pu-erh is a variety of fermented tea produced in Yunnan Province, China. There are two different types of Pu-Erh tea. The “raw” Pu-erh tea will typically be aged for years and has more complex flavors. It tastes rich, strong, and sometimes bitter. The aged Pu-erh is mellow, smooth, and offers a sweet (sugarcane or plum) aftertaste (hui tian). The “cooked” or “ripe” Pu-erh is generally earthy, nutty, or woody.
