Dry Leaves

2024: Fresh and vibrant aroma, with scents of floral or fruity notes. The colour exhibits more vibrant shades of green, reflecting the fresh and young nature of the tea.

2012: The dry leaves have a more complex and mature aroma, with notes of earthiness, wood, and sometimes dried fruits or medicinal herbs.  The colour is darker color with brownish tones.

Aroma

2024: The aroma of this younger sheng is fresh and more vibrant, with a focus on green, grassy notes.

2012: The aroma of this aged sheng is more nuanced, with a mix of earthy, fruity, and floral scents.

 

Colour of Tea Liquor

2024: Light and bright yellow.

2012: The colour turned to darker and more amber or orange-toned.

Taste & Mouthfeel

2024: The taste of a 2021 sheng is bright and fresh with a pleasant bitterness which is followed by a quick sweet aftertaste. It exhibits grassy or green notes, with a higher bitterness or astringency that hasn't mellowed out yet.

2011: The flavors have evolved, resulting in a smoother, mellower, more velvety and more complex taste. Earthy, woody, and fruity notes are present, with a subtle sweetness and a more rounded, mellow profile.


Infused Leaves

2024: Retain more of their original bright green color. The leaves are more robust and resilient, maintaining a fresher appearance. They are more intact, with clear leaf veins and edges.

2012: Display a darker, more subdued color, ranging from olive green to brownish hues. The leaves appear a bit more broken down and softened due to the aging process. They are slightly more fragile and delicate when compared to the younger leaves.

Infusing Tips

For raw Pu-erh, it is recommended to use 5-7g per brew, and for ripe tea, it is recommended to use 7-10g per brew.

1-6 Infusions

The tea should be steeped for 5 seconds after pouring water, without being overstepped to avoid bitterness.

7-12 Infusions

The brewing time can be extended by 5-10 seconds.

Over 12 Infusions

The brewing time can be extended by 10-30 seconds.

*      Mastering the steeping time according to your own taste, Da Shu Cha (Large-leaf arbor tree tea) can be brewed 15-20 times or more.
